Ingredients:

  • 500 grams chicken breast, diced
  • 1 1/2 tablespoons camelina oil
  • 1 large onion, diced
  • 4 large carrots, finely diced
  • 2 large garlic cloves, minced
  • 1 tbsp curry powder
  • 2 tsp ground turmeric
  • 2 tsp ground cumin
  • 2 tsp cinnamon
  • Cayenne flakes (optional)
  • 1 (15 ounce / 398 mL) can diced tomatoes, with juice
  • 1 (15 ounce / 398 mL) can reduced-fat coconut milk *
  • 3/4 cup uncooked lentils, rinsed and drained
  • 4 cups low-sodium vegetable or chicken broth
  • 1 to 2 cups baby spinach or baby kale
  • 2 tbsp fresh lime juice, or more to taste
  • Pink Himalayan salt, cayenne pepper flakes, and black pepper to taste
  • 1/2 cup plain 2% Greek yogurt (optional)
  • 1/4 cup fresh cilantro, chopped (optional)

* I tried the recipe using light coconut milk! If you want a little more indulgence, use regular coconut milk for more creaminess and richness.

Preparation:

  1. In a large pot, add the oil, chicken, onion, carrots, and garlic. Add a pinch of pink salt, mix, and sauté over medium heat for 4 to 5 minutes, until the chicken is golden brown.
  2. Stir in the turmeric, cumin, cinnamon, and curry powder until the chicken and vegetables are well coated. Continue cooking for about 1 minute.
  3. Add the diced tomatoes (with juice), coconut milk, lentils, broth, and a little pink salt and pepper to taste.
  4. Add the cayenne flakes, if desired, to taste.
  5. Stir to combine.
  6. Increase heat to medium-high and bring to a boil.
  7. Then reduce heat to medium and simmer, uncovered, for about 30 minutes, or until the lentils are tender.
  8. Turn off the heat and stir in the spinach until wilted.
  9. Add lime juice to taste. Taste and readjust seasoning if needed.
  10. Divide the soup into bowls and garnish each portion with lime slices, yogurt, and fresh cilantro.

Enjoy! Health is a lifestyle!
