Instructions:

  1. Place the raw cauliflower pieces in your food processor.
  2. Pulse until small pieces of cauliflower rice are formed.
  3. Add the cream *cheese*, green onion, vinegar, pink salt, and pepper to the food processor.
  4. Pulse everything together so that there are no visible chunks of cream *cheese* or cauliflower, but without turning it into a purée.
  5. Taste the cauliflower rice and adjust the seasoning to your liking.
  6. Spread the creamy cauliflower rice mixture along the nori sheet, leaving 2 inches of the nori sheet bare at the end.
  7. Place your selection of vegetables, avocado, and fish lengthwise.
  8. Moisten the bare edge of the nori sheet and roll it up tightly.
  9. Repeat with the remaining nori sheets and fillings.
  10. Slice with a wet knife.
  11. Serve with wasabi, Bragg’s liquid aminos, low-sodium organic soy sauce, or coconut-based soy-free seasoning sauce.
