Servings: 6 small bagels
Ingredients:
- 170 g ORGANIC L’Ancêtre cheese, Allegro, or VEGAN cheese (like DAIYA), shredded
- 85 g almond flour (ground almonds)
- 2 tablespoons VEGAN cream cheese (I love the RAWSOME company, *faux-mage à la crème* made with cashews) or VEGAN DAIYA... or as a last resort: regular cream cheese
- 1 egg –> if VEGAN, substitute the egg with chia seeds
- 1 teaspoon baking powder
- Pinch of pink salt to taste

Instructions:
- Mix the shredded cheese, almond flour, and cream cheese in a microwave-safe bowl.
- Heat in the microwave on HIGH for 1 minute.
- Stir, then microwave again on HIGH for another 30 seconds.
- Add the egg, baking powder, salt, and any other flavorings; mix gently.
- Divide the dough into 6 equal portions. Form into balls and then roll into cylinder shapes.
- Fold the ends of the cylinders to form a circle and seal the two ends together to form the bagel.
- Place on a baking sheet and sprinkle with sesame seeds. Bake at 220°C / 425°F for 15 minutes, or until golden brown.
- Enjoy occasionally as a treat 🙂
