Healthy Starbucks-style Frappuccino

HEALTHY STARBUCKS-STYLE FRAPPUCCINO
Ingredients:
- 2/3 cup chilled brewed coffee (you can also choose decaffeinated)
- 1/4 cup unsweetened cashew milk
- 1/3 cup regular canned coconut milk (ensure it contains no added sugar)
- 1 1/2 tbsp cocoa powder
- 2 tbsp Lakanto monk fruit sweetener (available at health food stores or Costco)
- 1 1/2 cups ice, up to 2 cups for a frothier frappuccino
- 2 tbsp vanilla protein powder
Topping:
- 1/4 cup (or more depending on how indulgent you feel) unsweetened whipped coconut cream (sold in the frozen section at Avril)
- 1 tbsp melted 80% dark chocolate
- Optional, if your inner child says so: 1 tbsp M&Ms
Instructions:
- Brew the coffee at least 1 hour before preparing the frappuccino.
- Keep the brewed coffee in the refrigerator to cool.
- In a blender, add the chilled coffee, unsweetened cashew milk, coconut milk, cocoa powder, monk fruit, ice cubes, and vanilla protein powder.
- Blend on high speed until smooth. You can add more ice if you would like your coffee to be frothier.
- Serve immediately like a grande frappuccino (2 1/2 cup drink), topped with unsweetened whipped coconut cream, a drizzle of melted dark chocolate, and M&Ms to taste.
