Rochers aux amandes et chocolat sans cuisson

No-bake chocolate almond clusters

No-bake almond & chocolate rocky roads

Gluten-free – Dairy-free

Ingredients:

  • 1/3 cup almond butter or nut butter of your choice
  • 1 tbsp coconut oil
  • 1/2 cup dark chocolate 70-80%, crushed into small pieces
  • 1 1/4 cups sliced almonds
  • 1 tbsp chia seeds
  • 1 pinch of coconut flakes on each rocky road — optional —

Instructions:

  1. Line a large plate or cutting board with a piece of parchment paper.
  2. Place the plate in the freezer while you prepare the rocky roads.
  3. In a microwave-safe bowl, add the almond butter, coconut oil, and dark chocolate pieces.
  4. Microwave in 30-second intervals, stirring between each interval to prevent the almond butter from burning.
  5. It should take a maximum of 90 seconds to fully combine all your ingredients.
  6. Stir in the sliced almonds and chia seeds into the chocolate mixture and mix well.
  7. Remove the tray from the freezer.
  8. Spoon the mixture onto the parchment-lined tray. Repeat until no mixture remains.
  9. Optional: add 1 pinch of coconut flakes on top of the rocky roads.
  10. Return the plate or tray to the freezer for 10 minutes or until the chocolate is firm.

You can serve these cookies with some berries. Bon appétit. Health is a way of life.

NOTE: for those with nut allergies, replace the almond butter with sunflower seed butter or tahini AND replace the sliced almonds with plain coconut slices (I love the ones from the Prana company).
