Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1/2 cup almond butter or nut butter of your choice (except peanut, as it is more inflammatory)
- 2 tbsp liquid vanilla
- 1/2 tsp cinnamon
- 1 tbsp ground chia seeds or ground flax
- 1/3 cup 80-90% dark chocolate chips or cacao nibs (if you can't find 90% chips, simply chop up some dark chocolate squares)
- To taste: a few drops of liquid stevia, flavor of your choice (hazelnut, dark chocolate, vanilla, plain…)
- As toppings: coconut flakes, fresh fruit, hemp seeds, mint leaves, 1 tbsp of my raspberry-chia jam recipe, unsweetened VEGAN yogurt… let your imagination run wild.

Instructions:
Drain and rinse the chickpeas.
- Place on a paper towel and dry.
- If some of the skins start to come off, remove and discard them (this will help the cookie dough from being grainy).
- Add the chickpeas, almond butter, natural vanilla extract, and cinnamon to the food processor. Blend until smooth and creamy.
- Add the ground chia seeds to the food processor. (To grind chia seeds, add them to a coffee grinder or buy them pre-ground).
- Mix until the mixture is uniform.
- Put the chickpea cookie dough mixture into a small bowl.
- Fold in the dark chocolate chips.
- Serve immediately as a snack.
