- 1 cup raw almonds, chopped (140g)
- 1 cup slivered almonds (85g)
- 1 cup unsweetened coconut flakes, well-packed (65g)
- 1 large egg
- 4 tbsp Monk Fruit (Monk Fruit isn't very well known in Quebec yet, but it is a natural sweetener, sold in health food stores)
- 2 tbsp almond butter
- 1 tbsp coconut oil or ghee
- 3/4 tsp pink salt
- 1/4 cup chopped dark chocolate 70-90%

Instructions:

- Place the chopped almonds, slivered almonds, and coconut flakes on 3 separate small baking sheets.

- In a large bowl, whisk together the egg and the monk fruit + protein powder (optional).
- In a small, microwave-safe bowl, melt the almond butter and coconut oil until smooth. About 30 seconds.
- Add the egg mixture, whisking until well combined.
- Add all the nuts, coconut, and salt, and mix well. Finally, fold in the dark chocolate.
- Pour the mixture into the 8x8 baking pan and press down VERY firmly.
- Bake until the top is firm, about 15 minutes at 350°F.
- Let cool COMPLETELY to room temperature in the pan.
- Once the bars have cooled, cut them into 12 and enjoy your bar...
NOTE: The bars can be kept in an airtight container on the counter for 2-3 days, or refrigerated for 1 week. Otherwise, freeze them.
