Big Mac version salade

Big Mac salad bowl

4 servings

Ingredients:

Big Mac Sauce:

  • 3/4 cup avocado oil mayonnaise** (I love the one from Chosen Foods, 100% avocado oil, available at Avril)
  • 4 tsp yellow mustard
  • 2 tbsp diced pickles
  • 1 tbsp white vinegar
  • 1 tbsp onion, chopped
  • 2 tsp Lakanto Monk Fruit (available at Avril or health food stores)
  • 1/2 tsp smoked paprika

Salad:

  • 1 lb organic or grass-fed lean ground beef (vegan version: organic tempeh or tofu)
  • 1 tsp pink salt
  • 1 tsp ground black pepper
  • 5 cups or more chopped iceberg lettuce
  • 1/2 cup sliced onions, halved
  • 1 cup Daiya vegan cheese or grated l'Ancêtre cheddar (grocery and health food stores)
  • 1/4 cup sliced pickles (or more, depending on your love for pickles haha)

Instructions:

  1. For the dressing, mix the mayonnaise, diced pickles, mustard, vinegar, onion, paprika, and Monk Fruit.
  2. Set aside while you gather the other ingredients.
  3. Heat a pan over medium heat and add the ground beef (or tofu or tempeh), break it into small pieces, and cook until almost done.
  4. Add pink salt and pepper to finish cooking.
  5. While the ground beef browns, chop the lettuce.
  6. Slice the onions and cut them in half, and roughly chop the pickles.
  7. When ready to serve the salad, combine the lettuce, onions, pickles, and cheese.
  8. Divide into four bowls.
  9. Add 1/4 of the ground beef mixture to each bowl.
  10. Drizzle with dressing and serve immediately.

Notes:

The sauce will keep for at least a week in the refrigerator, so double or triple the batch!

You could also use this sauce simply by adding it to a grilled chicken breast and serving with vegetables, or as a dip for healthy chicken nuggets (recipe to come).

You can make this salad in a Mason jar and take it to work.

Note: vegan version: use vegan mayonnaise, Daiya vegan cheese, and tofu or tempeh!

** I highly recommend buying a 100% avocado oil mayonnaise, since the vast majority of mayonnaises are made with canola oil. Canola is a low-quality, inflammatory food that often contains GMOs; in short, it contains nothing very nutritious. And BE CAREFUL, on the labels, you will see: contains avocado oil, but sometimes there is only 10% avocado oil and 90% canola oil... so with the mayo from the company CHOSEN FOODS, you cannot go wrong. 🙂
