PREPARATION
- Place the rack in the center of the oven. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- On a work surface, cut the squash in half lengthwise and remove the seeds. Season with salt and pepper. Place on the baking sheet, cut side down, and bake for 45 minutes to 1 hour, or until the squash is tender when pierced with a knife. Let cool slightly.
- Shred the flesh using a fork.
- In a bowl, toss the squash with 30 ml (2 tbsp) of camelina oil. Season with salt and pepper. Keep warm.
- In a large skillet, heat 15 ml (1 tbsp) of camelina oil and add the chicken strips, onion, and garlic. Cook for about 2 minutes, stirring. Add the eggplant, red bell pepper, zucchini, and asparagus. Season with salt and pepper. Continue cooking for about 15 minutes.
- Combine all ingredients in a large skillet, add the pesto, stir, and cook for 1 minute while stirring to heat the mixture through.
- Garnish with basil leaves.
- Stuff the spaghetti squash with the entire preparation.
