Gruau de quinoa protéiné

Protein-packed quinoa porridge

Quinoa is a popular and interesting starch to add to our plates. Versatile, this ingredient can be used in salads, as a substitute for rice or couscous, and can also be used in desserts and sweet meals. So, I’ve decided to help you step out of your morning comfort zone. My mission: to move you away from your cereals or porridge, which are often too low in protein and high in sugar, and whip you up a protein-packed quinoa porridge. Tasty to a fault, this porridge will give you plenty of energy to start your day off on the right foot!

Here are the ingredients

* 1 cup quinoa, rinsed
* 3 1/3 cups unsweetened vanilla or chocolate almond milk
* 4 scoops of vanilla or chocolate protein powder (I love the non-GMO vegan protein from Metagenics)
* 1 pinch stevia -optional-
* 2 tbsp cocoa powder (for a chocolate version... I didn't add any in this recipe)
* 1/2 cup toppings of your choice (coconut shavings, coconut flakes, nuts, seeds, berries, raw cacao, cinnamon, liquid vanilla...)

Preparation

* Combine the quinoa, almond milk, and the pinch of stevia in a saucepan over medium heat and bring to a boil.
Reduce the temperature and let simmer for 20 to 30 minutes, stirring often, until the milk is completely absorbed.
* Let the quinoa cool.
* Incorporate the vanilla protein powder & the cocoa powder (for the chocolate version).
* Add toppings to taste (I used plain coconut shavings, berries, liquid vanilla, and walnuts).
* Makes about 3 servings, depending on your morning appetite.

Pssss: If you're short on time in the morning, you can prepare the quinoa the night before and store it in the fridge. You'll just need to reheat it and add your choice of toppings when you're ready to eat breakfast.

Enjoy!
